This recipe is TOP ⬆ !!! It takes a little longer than other recipes, but it's really worth it. In addition to making it for a game day or when there are visitors and you want to surprise them, I make this delicious dish to accompany a lunch or dinner

Cauliflower is one of my favorite vegetables to cook because of its versatility and taste. I love using it to make low carb recipes like cauliflower rice, mashed cauliflower (coming soon to my page), or just steamed when I don't really feel like cooking.

The servings in this recipe are for two because I normally make it for my husband and myself. But you can make it for more people by doubling or tripling the recipe

 Cauliflower BBQ

Preparation Time: 30 minutes            Cooking Time: 30 minutes               Total Time: 60 minutes

 Portions: 2

Ingredients:

✔️1/2 large or 1 small cauliflower

✔️3/4 cup Almond flour (or coconut)

✔️1/2 cup of unsweetened vegetable milk (almonds or coconut)

✔️2 eggs (or 1/4 cup of water)

✔️Spices: I used 1 tbsp. of garlic powder, pepper and salt to taste

Instructions:

🔹 Preheat oven to 230°C or 450°F.

🔹 To cut the cauliflower, it’s easier for me to cut it first in half and then cut

the pieces to the size you want them to be, approximately the size of a bite.

🔹 Once cut, rinse it well.

🔹 In a bowl add the flour, spices, milk and eggs (or water) and mix everything.

🔹 Pour the pieces of cauliflower into the mixture so that they are well covered.

🔹 Cover a baking tray with parchment paper and place the pieces of cauliflower

    leaving space between them.

🔹Place them in the oven for 15-20 min.

🔹While you wait, prepare the BBQ sauce (recipe below) or use a sugar-free one.

🔹 Take the tray out of the oven and glaze with the sugar-free BBQ sauce.

🔹Put it back in the oven for another 15-20 minutes until crisp

🔹Serve & pour the leftover dip in a container in case you want more!

BBQ Sauce

Ingredients:

  • 1/2 cup (aprox. 70 g) Sugar-free ketchup

  • 20g Monkfruit Gold o granulated sweetener

  • 2 tbsp Organic Apple Cider Vinegar

  • 1 tbsp Worchester sauce

  • 1 tbsp Tamari dressing (or Coconut Aminos, but you´ll need more salt)

  • 1 tbsp Dijon Mustard

  • 1 tbsp Garlic Powder

  • 1 tbsp Onion Powder

  • 1/4 tsp Cayenne Pepper (or more if you like it spicy 🌶🔥)

Instructions:

🔹 In a small non-stick frying pan add the ketchup and the sweetener.

🔹 When it starts to heat up, add the other ingredients and mix.

🔹 Let it heat up and when you take out the cauliflower, coat it with the mixture.

🔹 The rest can be used as a "dip" for whoever wants more!
