Healthy Banana Bread

I swear you will love it!!! This is a very special recipe for me! I always try not to say that "this is the best recipe" unless it really is ... and I can assure you this is one of them. 

 

I can confidently call this banana bread the best and the healthiest! It has the sweetness, moisture and flavor that you are looking for in a banana bread, healthy or not. It is super moist and full of rich banana flavor.

 

I make it almost every weekend so I can share it with my husband and, trust me, he is the happiest man! We normally consume it as a post-workout meal, but it can also be done for breakfast or pre-workout (or just as a healthy treat 😉).

The recipe is for 2 servings. You can make more for more people, or store the other half for another day of the week in the fridge. Therefore you can prepare it in advance or make it in the moment for delicious breakfasts!

 Healthy Banana Bread 

 Preparation time: 20 minutes          Cooking time: 25 minutes           Total time: 45 minutes 

 Portions:

Ingredients:

🔸 3/4 cup (approx. 60 g) of gluten-free rolled oats

🔸 5 liquid egg-whites, or about 1/2 cup ~ 150g

🔸 1.5 scoop (35 g) of vanilla protein powder

🔸 A splash of vanilla or almond essence

🔸 Cinnamon & Stevia to taste

🔸 A splash of milk (I use almond, but you can use  your favorite one)

🔸 1/2 banana (approx. 60 g) 🍌 

 

Cookware:

🔸 Blender

🔸 1 loaf pan. Measurements may vary, but to give you an idea,

    mine measures 22.5 x 10.5 x 5.5 cm

🔸 Oven or Air Fryer

Instructions:

🔸 Preheat the oven at 160°C or 320°F.

🔸 Blend all the ingredients.

🔸 Grease a loaf pan with coconut oil spray.

🔸 Place the mix in the previously greased loaf pan.

🔸 Place it in the oven for 25 to 30 minutes. Time depends on each oven.

    I found that the perfect time for mine is 26 minutes.

🔸 If you use an Air Fryer check it after minute 20. It should be ready between

    minute 20 and 25.

🔸 Check it after 25 minutes. You can introduce a knife and it should come out clean.

🔸 I normally don't use toppings because I don't think it needs them, but you can

    use greek yogurt and maple syrup for example.
