Zucchini Fries

A great option to eat with your whole family (or just for youself 😬) and avoid eating those famous fries that are bad for your health 🍟 associated with many diseases (sorry junk food companies!).

These fries are healthy and you won't believe they don't need any oil to be crispy! I discovered this recipe in my keto diet days and decided to perfection it. They are an excellent complement to lunch or dinner. 

When ready to serve, you can add your favorite dip or sauce. There are many options, and here you'll also find our favorite dip recipe so that you can do it too! As I always say, the healthiest things are homemade, so this recipe is super approved in terms of quality and taste!

 Zucchini Fries 

 Preparation Time: 20 minutes                   Cooking Time: 25 minutes                    Total Time: 45 minutes 

Portions:

Ingredients:

✔️ 2 zucchinis

✔️ 1 whole egg 🥚 

✔️ 1/2 cup (62 g) Parmesan cheese 🧀 (make sure you get cheese labeled “Parmigiano-Reggiano”

as many others contain more fillers than the actual cheese 😣)

✔️ 1/2 cup of almond flour (50g)

✔️ For Lactose intolerant (or if you just prefer to avoid cheese) use 1 cup of Almond flour instead

*You can also just use cheese, but with the flour it will come out crunchier and crispier 👌

Ingredients for dip:

✔️ 1/2 cup of mayo (there are many different healthy brands

made of avocado and/or egg or even vegan 😉)

✔️ 1 lemon, juiced

✔️ 1 garlic clove, minced

✔️ Some parsley, chopped

✔️ Salt & pepper to taste

Instructions:

🔸 Preheat the oven to 425°F or 220°C and line 2 medium trays (or 1 big) with parchment paper

🔸 Slice the zucchini in half & then that half into 4 parts and then in half each of those. You should end up with 16 pieces per zucchini

🔸 Place the egg on one bowl and beat it

🔸 Place the parmesan with the flour and spices on another bowl

🔸 Place with one hand the zucchini in the egg wash & transfer to the cheese mix. Use your other hand to coat them & place them on the tray. Remember to use ONE hand for each mix or you’ll end with a mess 🤪

🔸 Bake for 25 min, flipping halfway through on the cut side

🔸 For the dip, just mix all the ingredients in a bowl and serve all together! 😉
