
Chocolate-Banana Pancakes
High in Protein

You guys don't know how happy it makes me when I make these healthy recipes and not have that feeling of depriving myself or losing other things. People who say eating healthy is hard and boring ... they definitely DO NOT know what they are talking about!
I am a fan of sweet things, and this recipe is one of my favorites for that morning craving. Something I've learned is that this dough works best if you let it sit. The batter thickens a bit and the pancakes cook much better. However, keep in mind that they are much more delicate than regular pancakes because they do not have flour to add stability, but that in turn results in very tender and moist pancakes.

Chocolate-Banana Pancakes

Dry Ingredients:

30 g Gluten Free Oatmeal (my favorite is Bob's Red Mills)

15 g Vegan chocolate protein powder. If you don’t have chocolate flavor, you can add cocoa powder

1/4 tbsp baking powder

1/4 tbsp Baking soda

Stevia and cinnamon for taste
Wet ingredients:

1 tbsp of apple sauce (optional). It makes it more wet

A splash of organic apple cider vinegar (I use Bragg's brand). It works with the baking soda and makes it more fluffy 😉

60g egg whites
-
A splash unsweetened almond milk
Toppings:
I used these, but you can use your favorite ones:

1 Banana y Bee Pollen
Instructions:

Mix all the ingredients, grease a pan with coconut oil spray.

Pour the mixture and leave for about 4-5 minutes on medium heat.

When ready, turn it over and leave for another 3 minutes.

Cut the banana and place it on top with the pollen. You can add Maple Syrup
